White Bean, Spinach, and Tomato Salad: Quick, Seasonal and Super Healthy

Ingredients:
I-2 tablespoons extra Virgen Olive Oil
2 garlic cloves (finely chopped)
¼ cup shallots (diced)
2 cups white navy beans
4 cups of baby spinach
1 tomato (chopped)
Salt & pepper to taste
Garnish with fresh seasonal herbs such as basil or parsley
Instructions:
Sautee the garlic and shallots until translucent
Add the other ingredients
Cook 3-4 minutes until spinach is wilted
Season to taste
Serve warm or cold
