White Bean, Spinach, and Tomato Salad: Quick, Seasonal and Super Healthy 

This delicious recipe provides a whopping 22 grams of fiber per serving! On average, women require at least 25-30 grams a day.

Spinach and tomatoes are veggies easily found at your local farmer’s market or family garden. 

Ingredients: 

  • I-2 tablespoons extra Virgen Olive Oil 

  • 2 garlic cloves (finely chopped) 

  • ¼ cup shallots (diced) 

  • 2 cups white navy beans 

  • 4 cups of baby spinach 

  • 1 tomato (chopped) 

  • Salt & pepper to taste 

  • Garnish with fresh seasonal herbs such as basil or parsley 

Instructions: 

  • Sautee the garlic and shallots until translucent 

  • Add the other ingredients 

  • Cook 3-4 minutes until spinach is wilted 

  • Season to taste 

  • Serve warm or cold
