Health Benefits
- Tomatoes are high in lycopene, which supports both eye and prostate health.
- The beta carotene in carrots also supports eye health as well as protects against certain cancers.
- Garlic is great for heart health and immune support.
- Coconut milk contains a special kind of saturated fat called MCT or medium-chain triglycerides. MCTs are typically used as an energy source for the body rather than being stored as fat.
- This soup also is naturally high in fiber.
This dish is shown with homemade croutons. You could easily add a drizzle of balsamic vinegar glaze or use pumpkin seeds.
To make a heartier meal, serve over white rice and garnish with chunks of avocado and feta cheese.
