Simple, Late Summer Farmers’ Market Soup


Ingredients: 

  • 6-8 carrots, peeled & cut into chunks 

  • 1 shallot unwrapped, rough cop 

  • Avocado oil 

  • 3-4 cloves of garlic 

  • 4-5 heirloom tomatoes, cored and cut into chunks 

  • 1 can of full-fat coconut milk 

  • 8-16 ounces of vegetable or chicken stock 

  • Turmeric 

  • Cumin 

  • Salt & pepper to taste 


Instructions

  1. Heat oven to 400 degrees 

  2. Coat carrots, shallot and garlic in avocado oil 

  3. Place on roasting pan and leave in oven until carrots are getting soft 

  4. Coat the tomatoes in avocado oil 

  5. Add tomatoes to oven or about 4-5 minutes 

  6. Heat up some olive oil in a dutch oven 

  7. Add roasted ingredients from oven 

  8. Add coconut oil 

  9. Blend together either using a blender or hand held immersion blender 

  10. Return to dutch oven 

  11. Add stock to thin to desired consistency 

  12. Add spices 


Health Benefits 


  • Tomatoes are high in lycopene, which supports both eye and prostate health. 

  • The beta carotene in carrots also supports eye health as well as protects against certain cancers. 

  • Garlic is great for heart health and immune support.

  • Coconut milk contains a special kind of saturated fat called MCT or medium-chain triglycerides. MCTs are typically used as an energy source for the body rather than being stored as fat. 

  • This soup also is naturally high in fiber. 


This dish is shown with homemade croutons. You could easily add a drizzle of balsamic vinegar glaze or use pumpkin seeds. 


To make a heartier meal, serve over white rice and garnish with chunks of avocado and feta cheese.
