Health Benefits
Tomatoes are high in lycopene, which supports both eye and prostate health.
The beta carotene in carrots also supports eye health as well as protects against certain cancers.
Garlic is great for heart health and immune support.
Coconut milk contains a special kind of saturated fat called MCT or medium-chain triglycerides. MCTs are typically used as an energy source for the body rather than being stored as fat.
This soup also is naturally high in fiber.
This dish is shown with homemade croutons. You could easily add a drizzle of balsamic vinegar glaze or use pumpkin seeds.
To make a heartier meal, serve over white rice and garnish with chunks of avocado and feta cheese.
